Keto Gingerbread Pancakes


Ingredients


• 8 oz cream cheese, softened

• 4 eggs

• 1/2 cup coconut flour

• 1/4 cup ChocZero Vanilla Syrup or substitute with ¼ cup Swerve + ¼ cup heavy cream

• 1/4 cup brewed coffee

• 1 tablespoon ground cinnamon

• 1 tablespoon ground ginger

• 1/2 teaspoon allspice


Instructions


STEP 1

Add all ingredients to a blender.


STEP 2

Blend ingredients until combined and smooth.


STEP 3

Pour gingbread pancake batter onto a preheated electric griddle or skillet set to low heat. Pour enough batter to make a pancake about 3 inches in diameter. Smaller keto pancakes are easier to flip. Cook until the edges are set and a spatula can easily slip under the pancake.


STEP 4

Flip each pancake once the edges are set and continue cooking for another 3 minutes.
