Chorizo Cauliflower Cheese Recipes


1 cauliflower broken into medium florets

40g butter

60g Chorizo slices (or pepperoni slices if you prefer)

50g flour

400ml milk

120g grated cheddar cheese (plus an extra handful to sprinkle over the top)

80g frozen spinach (or 40g fresh roughly chopped)

Ground black pepper


-Place the cauliflower in a saucepan and cover in boiling water. Bring back to the boil and simmer for 10-15 minutes until tender.

-In the meantime, put the chorizo slices into a pile and slice into thin slithers. Put them in a non-stick pan with the butter and fry gently for 5 minutes.

-Stir in the flour and cook for a further 1 minute.

-Slowly add the milk a little at a time, bringing it to the boil each time before adding more. When all of the milk is used, stir in the cheese, the frozen spinach and some ground black pepper. Simmer until the spinach has defrosted.

-Drain the cauliflower and place in an oven proof dish. Pour over the sauce and top with a handful of grated cheese.

-Bake for 30 minutes until the cheese is golden brown
