Carrot Cake Recipes


Carrot Cake

2 cups shredded carrots

1/4 cup coconut sugar

1/2 tsp organic sweet leaf stevia

(I do 3/4 tsp organic sweet leaf stevia and 2 T. Coconut sugar)

1 cup oil

3 eggs - separated

1 tsp vanilla extract

1 tsp baking powder

2 tsp baking soda

1/4 tsp salt

4 cups almond flour

Beat Egg whites until almost stiff. Add the sweetener and beat until stiff.

In a separate bowl mix the rest of the ingredients. Add the stiff egg whites and mix.

Press the mixture into an 8” square or 5x7 (storage size) baking pan.

Bake at 350 for 45 minutes.

The cupcakes I baked for 25 minutes and then checked it and added another 5 minutes.

Parve Cream Cheese Frosting

1 Wayfare Cream cheese

Coconut syrup to taste - around 2 T. (If I would make it for myself I would mix stevia and coconut syrup.)

1 tsp vanilla extract

1/2 tsp guar gum - this is a thickener you can also use xanthan gum
