Biscotti Recipes

Ingredient
• 6 tbsp unsalted butter (room temp)
• 2/3 cup sugar
• 1/4 tsp salt
• 1.5 tsp baking powder
• 3 tsp vanilla
• 2 eggs (room temp)
• 2 cups flour
• 1 cup mini chocolate chips

• extra sugar
• extra chocolate chips for melting
• coarsely chopped almonds

1. preheat oven to 350f and line a baking sheet with parchment paper
2. in a large bowl, cream the butter, sugar, salt, baking powder, and vanilla with an electric hand mixer.
3. beat in the eggs. then mix in the flour until combined.
4. fold in the chocolate chips. the dough will be sticky!
5. divide the dough in two equal pieces. shape each half into a ball and then use your hands to flatten them into logs on the prepared baking sheet until they’re about 12”x 3”. gently press the sides and ends of the loss to even them out and flatten them. you may need to dampen your hands if the dough is extra sticky.
6. sprinkle the logs with sugar and bake for 25 minutes. remove from the oven and cool on the pan for 20 min.
7. reduce the oven to 325. transfer logs to a cutting board and use a serrated knife to cut the log diagonally into equal pieces about 1/2” thick.
8. place biscotti, cut side up, on the baking sheet and bake for another 20 or so min, until they’re very dry and beginning to turn golden brown around the edges.
9. remove from oven and transfer the biscotti to a wire rack to cool completely.
10. of dipping in chocolate, melt the chocolate in a small bowl in the microwave at 50% power until completely melted. dip each cookie and sprinkle with crushed almonds
11. refrigerate for about 10 min to set the chocolate, and store in an airtight container :)
